Light and Luscious Lemon Pie

20 oz. can crushed pineapple with juice
1/3 c. water
1 orange, peeled and seeded 6 tbsp. cornstarch
6 tbsp. honey 6 tbsp. lemon juice
1/2 tsp. salt 1 tsp. fresh grated lemon rind
1/2 tsp. vanilla 1/2 tsp. lemon extract

BLEND all ingredients until smooth. (Some fibers will still be visible.) COOK in
saucepan until thick. POUR into baked pie shell and CHILL.
